Where every slice tells a story, and every cup feels like home. A Boise institution since 2011 — under new, very local ownership since September 2025.

Hi, I’m Emily — the new owner of Boise Pie Company.

With deep family roots in Boise, stepping into this role feels like coming home. After years on the East Coast, my son, my stepdad, and I returned to this beautiful community to pursue a dream that’s been baking in my heart for nearly thirty years.

Growing up, I learned that the best recipes don’t always come from a book — they come from the heart. I spent countless hours in the kitchen with my grandma, rolling dough and learning the rhythm of a well-loved recipe. It was more than cooking; it was storytelling, tradition, and love passed down through generations. My very first sip of black coffee came from my grandpa’s old white mug when I was four or five — a taste that still brings me back to slow, quiet mornings filled with warmth and connection.

My dad had a passion for gourmet food and loved blending the classic with the unexpected. Sunday dinners and holiday meals became our sacred time, bonding over flavor, technique, and creativity. Together, we often dreamed of owning a bakery and coffee shop — a place where love for food, family, and community could live on.

Now that dream is real. Boise Pie Co. is more than a bakery to me — it’s a living legacy. It’s a space for new memories, for old family recipes and new inspirations, for neighbors and friends to gather and savor something made with care.

I’m honored to carry forward the spirit of this beloved Boise institution while adding a few heartfelt touches of my own. Whether you’re here for a slice of pie, a fresh pastry, or your favorite coffee, know that you’re part of something special.

Our coffee

Partnering with Caffe D’arte.

Great food and drinks bring people together, and we’re honored to work with people who share our values of quality and craftsmanship. That’s why we proudly serve Caffe D’arte — founded in Seattle in 1985 by Italian-born master roaster Mauro Cipolla, who learned his craft in Naples under a fourth-generation roaster.

Caffe D’arte roasts in the regional styles of Italy: small batches, blended the traditional way, with time, history, and tradition in every cup. It’s the espresso behind our Gem State drinks — and the perfect partner for an Italian kitchen.
